We do Hanna Andersson long-john pajamas every year for Christmas. They are organic cotton, very high-quality, and have lots of designs. They last for years and can be handed down from one kid to the next, with designs that work for any and all genders. Expensive when at full price but they often run half-price sales. My eight year old is getting Castle Panic (cooperative board game), my six year old is getting an art set and a sewing set with included instructions for some simple projects.
I smiled thinking of gingerbread on bicycles. Did you use a recipe that worked well for you? I'm attempting gingerbread cookies next week. Also, I love that you're getting to read aloud one on one with your daughter! Re: gifts - my sons are 4, 6, and 7 and some of the things we are giving them are pajamas, books that go with audio CDs (like this King Arthur onehttps://welltrainedmind.com/p/king-arthur-knights-2nd-edition/) for my 6 year old who loves knights, and then the big thing: a trampoline for them all to use in the backyard.

In our experience the magnatile knockoffs are not as good. Less magnets, not designed to click together as well. You may be able to buy them secondhand—they are incredibly strong and long lasting.

Somethings on our list this year…lumipets, cat stickers, small side purse, graphic novels, ooly sparkly gel pens, cat ear muffs, blue tooth capable headphones, hot water bottles, and a cozy sweatshirt.
E is getting some second hand Playmobil from ebay (might work for the figurine request made earlier?), a marble mini golf game and some craft things from us. Lots of Lego from relatives and a few card games such as Zeus on the loose which looks quite fun.
Also a request for your gingerbread recipe has been made as apparently the star was delicious.
We had a Hape wooden marble run set that was almost therapeutic with the sound of marbles clicking as they ran over the accelerators. Clean, simple open-ended design. Pricey but ours were second hand.
Also, a slack line is a great fun stealthy-healthy gift!

They're nice, but they don't sell them in the UK. I think the most similar ones you can get here are Hatley.

The New York edition of The Nutcracker with Macaulay Culkin is a great edition to watch with kids (available on various streaming sites).
